In a fraction of the time it takes to make a cheesecake, you can savor the fluffy taste of sweet cheesecake style filling and fresh strawberry. These are seriously worth the minimal effort it takes to make them!
Unfortunately, one of the first food casualties of a low carb diet is fresh fruit. There are a few that are okay to have in moderation and thankfully one of them is strawberries. A medium size strawberry contains only 0.7 grams of net carbs so I try to find every way I can think of to use them.

WHY ARE STRAWBERRIES CALLED A SUPER FOOD?
Besides being low in carbohydrates, strawberries are high on the list of fruits that help fight inflammation. There are many other “cross-over” foods that are both low in carbs and high in anti-inflammatory properties. These include almonds, avocados, broccoli, and berries. Fatty fish like salmon, herring and sardines are packed with anti-inflammatory properties. Spinach, kale, Swiss chard ,walnuts and olive oil also top the list.
Eating 9 medium strawberries takes care of 100% of your daily vitamin C needs for only 6.3 net carbs and 36 calories. According to Medical News Today, they also are rich in potassium, folic acid, and fiber. They have also been shown to protect against heart disease, stroke, and cancer. Strawberries are also recommended foods for people who have high blood pressure due to their high potassium contents and diabetes, because they are a low glycemic index food.

PRO TIPS FOR MAKING STUFFED STRAWBERRIES
- Choose ripe berries that are uniform size and shape, with no bruises.
- Refrigerate berries before coring. Cold, firm berries are easier to cut.
- If needed to make the strawberry stand upright, cut thin slices off the bottom at an angle.
- Whip cheesecake filling until firm peaks appear. If filling is too heavy, add additional cream, one tablespoon at a time and continue whipping.

LOW CARB KETO CHEESECAKE STUFFED STRAWBERRIES
INGREDIENTS
- 1 pound fresh strawberries, whole
- 4 ounce cream cheese, softened
- 4 tbsp heavy cream
- 1/3 cup powdered eyrthritol
- 1 tsp vanilla extract
INSTRUCTIONS
- Wash and core the strawberries.
- In a small bowl, use a hand mixer to beat together cream cheese and heavy cream until smooth.
- Add erythritol and vanilla. Continue beating until light and fluffy and stiff peaks form.
- Transfer cream cheese mixture to a piping bag fitted with a tip. Place tip into hollowed core of strawberry and pipe a small amount of filling into each strawberry, allowing the filling to come over the top about 1 inch.
- Cover and refrigerate until ready to serve or up to 2 days.
