Fall has flown by straight into winter. The weeks are going by in one hectic blur while my to-do list remains unchanged! I had planned this post (and a few others) to be ready well before Thanksgiving, but we know what happens sometimes when we plan. Life happens.

Anyway, I was determined to serve pecan pie and needed corn syrup to make it. After searching for a low carb substitute and not finding what I was looking for, and frankly not wanting to spend any more money on special ingredients, I decided to try to make my own. This corn syrup recipe worked well in my Keto Kentucky Pecan Cheesecake Pie, but I would probably not use it for candy making. The erythritol crystallizes and does not remain smooth and glossy like corn syrup for candy making.

This recipe is adapted from She Calls Me Hobbit . This is the light corn syrup version.

CAN HOMEMADE LOW CARB CORN SYRUP BE MADE AHEAD?

The first time I made this corn syrup substitute, I left it out to cool overnight (forgot about it) and it completely crystallized and got “crunchy”. I made it again and let it only cool slightly before I used it in my pecan pie recipe and it worked perfectly. Lesson learned – this recipe is for corn syrup that you will use right away – it cannot be stored or made ahead.

HOW TO MAKE LOW CARB HOMEMADE CORN SYRUP

This syrup tastes like corn syrup, but takes a little work.  Just follow the steps below and scroll down for the recipe.

  1. In a small saucepan over medium heat, mix the water and granulated erythritol (or similar sweetener). Bring to a low boil.
  2. Stir in butter and vanilla extracts. Reduce heat to low.
  3. In a small bowl or cup, mix the xantham gum with a tablespoon of  hot water and stir with a fork to remove as many clumps as possible. It will thicken up quickly and not dissolve completely.
  4. Add the xantham gum mixture to the saucepan, stirring continually. Raise the heat to medium and bring the mix back to a low boil. Cook for one minute until the mixture starts to thicken. Remove from heat.
  5. Pour the corn syrup thru a sieve, pressing the corn syrup thru while leaving the xantham gum solids in the sieve.
  6. Allow to cool slightly before using in your recipe.

HOW DOES XANTHAM GUM WORK?

Xantham gum is a food thickener or stabilizer made from from  corn sugar broken down by a plant bacteria called Xanthomonas campestris thru fermentation.  The remaining residue from the breakdown is dried and turned into a powder. It’s also used in toothpaste and some medicines.

It is best mixed with sugar or oil first, then added to the liquid. For this recipe I used hot water since sugar and oil won’t work with our recipe. Another way would be to use high-speed mixing. I avoid the high speed mixing or immersion blender because xantham gum has a tendency to foam when mixed at high speeds. For this recipe, the easiest method was to thicken the syrup as needed, then strain out the undissolved xantham gum.

WHAT OTHER  LOW CARB OR KETO SUBSTITUTES CAN I USE  FOR CORN SYRUP IN RECIPES?

I have not tried these alternatives, but I have read that you can get similar results to corn with them.

  • Maltitol Syrup
  • Vitafiber IMO Syrup
  • Sugar-free Maple Syrup
