LOW CARB BROCCOLI BACON SALAD

Easy to make low carb broccoli bacon salad packs in flavor and crunch with every bite, with cream, mustard and spices.  Great dish for barbecue or any night of the week!

Ingredients

  • 12 cups broccoli cut into small florets
  • 12 slices thick cut bacon cooked and crumbled
  • 8 ounces sharp cheddar cheese block cut into 1/2-inch cubes
  • 1/3 cup sliced almonds lightly toasted
  • 1-1/2 cups mayonnaise
  • 2-1/2 tbsp apple cider vinegar
  • 2 tbsp powdered erythritol
  • 1 tsp sesame oil
  • 1/4 tsp black pepper

Instructions

  • In a large bowl, toss together broccoli, bacon, cheese cubes and almonds.
  • In a small bowl or measuring cup, whisk together mayonnaise, apple cider vinegar, erythritol, sesame oil and black pepper until smooth.
  • Pour dressing over ingredients in large bowl  and toss to coat. 
  • You can serve right away, but chill for several hours for the best flavor.

Notes

*If desire, set aside a few bacon crumbles, cheese cubes and a handful of almonds to garnish salad before serving.
