Low Carb Breakfast Casserole Recipe with Sausage and Broccoli

Ingredients

  • 1 pound breakfast sausage
  • 1 red bell pepper stemmed seeded and diced
  • 12 slices bacon
  • 2 cups broccoli florets bite-size
  • 10 large eggs
  • 1 cup heavy cream
  • 2 cups cheddar cheese shredded
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp hot sauce

Instructions

  • Preheat oven to 350° F. Lightly grease or mist 9 x 13 baking dish with non-stick spray.
  • Brown sausage over medium-high heat until little pink remains. Add red bell pepper and saute with sausage peppers are tender and no pink remains on sausage. Drain fat and transfer to a plate.
  • In the same pan, cook bacon until crisp. Drain all but 2 tablespoons bacon drippings and transfer to a paper towel lined plate.
  • Add broccoli to pan. Saute over medium-high heat until tender-crisp. Remove from heat.
  • In a large bowl, whisk together eggs and cream. Add onion powder, garlic powder, paprika, salt, pepper and hot sauce. Stir until distributed throughout.
  • Add 1-1/2 cups cheese, sausage with peppers, bacon and broccoli to the egg mixture. Stir lightly.
  • Pour mixture into prepared casserole dish. Sprinkle remaining cheese evenly over the top.
  • Bake on center rack of oven for 45 - 55 minutes until knife inserted in center comes out clean, and top is golden brown.
