HOW TO MAKE LOW CARB SMOKED SAUSAGE BROCCOLI CASSEROLE
Most of the best casserole recipes have the same ingredient formula – meat (or other protein), filler, binder and spice. For this recipe the protein is smoked sausage, broccoli is the filler, cheese the binder and various spices for more flavor.
SMOKED SAUSAGE OPTIONS
For our recipe, we used rope style Polska Kielbasa smoked sausage, made with pork, turkey and beef. Polska Kielbasa tends to have more garlic flavor than regular smoked sausage. When making any recipe, using ingredients you like will yield the best results for you, so use the smoked sausage variety that you prefer.
TIPS FOR MAKING A CASSEROLE
PREP ALL OF THE INGREDIENTS
The easiest way to make a casserole is prep all of your ingredients first. Casseroles generally have all of the ingredients mixed together, so it won’t be obvious if you missed an ingredient. You wouldn’t want to forget that you added the cayenne pepper and then add it again by mistake!
CHECK THE SODIUM CONTENT
There is sodium naturally and added to many recipe ingredients. Salt can easily make or break the flavor of the casserole. If there is too little salt you can add some… too much salt and the dish is ruined. This recipe contains 698 mg of sodium in each serving, so no additional salt was added to the recipe ingredients.
ADD SPICES TO WET INGREDIENTS
For even flavor, stir the spices into the wet ingredients. This will spread the spices out evenly thru the entire casserole.

LOW CARB SMOKED SAUSAGE BROCCOLI CASSEROLE
INGREDIENTS
- 8 ounce sour cream
- 8 ounce cream cheese (1 block), softened
- 2 tsp garlic powder
- 1 tsp minced onion flakes
- 1/8 tsp cayenne
- 14 ounces Polska Kielbasa smoked sausage, sliced into 1/4 inch thick pieces
- 12 ounce frozen broccoli florets, thawed
- 1 large red pepper, small diced
- 2 cups shredded Monterey Jack cheese, divided
- salt and pepper to taste
INSTRUCTIONS

Preheat oven to 350°. Spray 9 x 13 or similar size pan with cooking spray.

In large mixing bowl, mix sour cream, cream cheese, garlic powder, onion powder and cayenne.

Add red pepper, broccoli, sausage and 1/2 of shredded cheese to sour cream mixture. Stir to coat.

Scrape sausage mixture into prepared pan. Top with remaining shredded cheese.

Bake on center rack of 350° oven for 30 minutes until cheese is melted and edges are bubbling.

Let stand 5 minutes before serving.
