LOW CARB KETO CHICKEN SALAD RECIPE
Chicken salad has become a staple of my Sunday weekly meal prep routine. It’s simple to make in minutes, and there’s nothing like having a bowl of chicken salad handy for a quick lunch or dinner through the week when you don’t feel like cooking. The best part is that chicken salad ingredients are naturally low in carbs, so there’s no sacrificing on any of the flavor!
The recipe is versatile too. My kids don’t like onions in their salad, so I make it without and keep a tub of diced red onions in the fridge to add-in to mine. Sometimes I’ll sprinkle in fresh dill too, just to change up the flavor or throw in diced avocado for creaminess.

INGREDIENTS TO MAKE KETO CHICKEN SALAD
- Cooked Shredded Chicken – great for making easy pantry recipes!
- Sour Cream
- Mayonnaise – I used regular mayonnaise for this recipe, but light mayo can be substituted if you want to save some calories.
- Celery – thinly sliced
- Red Bell Pepper – diced
- Sliced Almonds
- Scallions – only the green part thinly sliced
- Fresh Parsley – chopped
- Whole Grain Mustard
- Paprika
WHAT TO SERVE WITH LOW CARB CHICKEN SALAD
This salad is satisfying eaten right out of the bowl, all you need is spoon! This keto friendly Chicken Salad also makes an incredible sandwich served on low carb bread. Honestly, I’m a crispy cracker addict, so my favorite way is to scoop it up on low carb crackers like Flackers or delicious cactus crackers.
Other ways to serve Low Carb Chicken Salad:
- Serve it on a bed of lettuce
- Make a lettuce wrap – try Little Gem lettuce leaves!
- Scoop it into mini bell pepper boats
- Stuff it into tomatoes
No matter how you serve the chicken salad, pair it with a cup of soup like Keto Roasted Cauliflower Soup or Keto Broccoli Cheddar . You’ll be noshing on a super hearty and protein-packed lunch or dinner!
HOW TO STORE LOW CARB KETO CHICKEN SALAD
Keto Chicken Salad will keep in the refrigerator for up to 3 days in the refrigerator. Leftovers should be stored tightly covered. If storing, you might need to stir the chicken salad before using as some of the ingredients may separate.
Chicken salad can be left out at room temperature for up to 2 hours. After that, the chicken salad should be discarded.
CARBS IN LOW CARB KETO CHICKEN SALAD RECIPE
Depending on the ingredients, Chicken Salad can make a tasty and easy low carb meal. This recipe has less than 1 net gram of carbs per 1/2 cup serving. It’s when ingredients like dried cranberries, grapes, apples or sweet salad dressings are used that the carbs start adding up. So be intentional with your ingredients.

Low Carb Keto Chicken Salad
INGREDIENTS
- 3 cups shredded chicken, cooked
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup celery, thinly sliced
- 1/4 cup red bell pepper, diced
- 1/4 cup almonds, sliced
- 2 tbsp scallions, green only, thinly sliced
- 1 tbsp fresh parsley, chopped
- 1 tsp whole grain mustard
- 1/2 tsp paprika
- 1/4 tsp black pepper
- salt to taste
INSTRUCTIONS

Place all ingredients into a large bowl. Mix well.

Cover bowl with plastic wrap and refrigerate for at least 1 hour.

Serve cold on a bed of greens.
