And it is family tested. My very picky eaters loved it…they even took second helpings.

- Ground beef should be 80/20 for the best results.
- To avoid egg streaks in the baked meatloaf, take time to thoroughly whisk together the egg mixture ingredients.
- Forming and baking meatloaf on foil sheet allows the meatloaf to be transferred easily out of the pan for cutting.
- Place the pan toward the back of the oven with ends of loaf facing the sides of oven, allowing for the most even cooking.
- Allow the cooked meatloaf to stand 5 – 10 minutes before cutting to allow the juices to settle.

INGREDIENTS
- 2 pounds ground beef, 80/20
- 1/2 cup flax seed meal or almond flour
- 2 large eggs
- 3/4 cup beef broth, low sodium
- 4 cloves garlic, minced
- 1 tbsp onion powder
- 2 tbsp worcestershire sauce
- 1 tsp italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
- 1/3 cup Low Carb Barbecue Sauce , Optional
- 1 tsp snipped fresh parsley for garnish , Optional
INSTRUCTIONS

Preheat oven to 350°.

In a large bowl, whisk together 1 – 2 minutes, flax seed meal, eggs, broth, garlic, onion powder, worcestershire sauce, italian seasoning, salt and pepper.

Crumble ground beef into egg mixture and stir to combine.

On a sheet of foil, form beef mixture into a loaf . Transfer on foil to baking pan.

Brush on a thin layer of Low Carb Barbecue Sauce (optional).

Place baking pan on middle rack of oven and bake for 50 minutes.

Brush on additional layer of low carb barbecue sauce and let bake for another 10 minutes.

Meatloaf is fully cooked when a meat thermometer inserted into the center reads at least 160 degrees.

Let meatloaf stand for 10 minutes before slicing.
